Herb Riced Cauliflower

Serves 2 as a side dish. Double the recipe for 4 people.

Equipment Needed

1. Colander
2. Microwave Safe Glass Cookware
3. Large Slotted Spoon
4. Measuring Spoons
5. Measuring Cup
6. Microwave


One half a head organic cauliflower (about 16 ounces) cut into 1/2-inch pieces and riced in the food processor. You can also find riced cauliflower in the produce section and the frozen section of the store.
1/4 cup water or organic vegetable broth (the vegetable broth adds some more flavor)
½ teaspoon sea salt (add to taste)
Pepper to taste

Optional Herbs and Spices
½ to 1 Teaspoon Dill (optional)
½ to 1 teaspoon freshly grated ginger (optional)
½ teaspoon sesame seeds (optional)
1 tablespoon coconut aminos (optional)
All of the spices and herbs together make a great combination to go with Seafood and Salmon

Instructions - Microwave

1. Place all of the ingredients in a microwave-safe glass cooking bowl with a cover.

2. Set the microwave to 15 minutes on high.

3. Fluff with a fork.

4. Serve with a slotted spoon.

5. Enjoy a healthy rice substitute.
